Antonin Roux and Aymard Caillol are two artists behind Vins Mercuriales, a DJ duo turned vignerons. Antonin is an experimental music composer based in Paris, while Aymard owns and operates a wine bar in Marseille. 

They attended the first edition of the BIM natural wine fair in Arles and afterwards began incorporating natural wine into their parties in Paris. After a stage with Martin Textier in 2019 where they vinified their first micro-cuvées in demijohns, they officially launched their own project.

In 2022, they found a cave in the Rhône Valley in Saint-Restitut and released their debut vintage. For their project, they purchase organically certified grapes from different regions and produce their wine with indigenous yeast.

The wines undergo racking after fermentation, and are not fined nor filtered. Their cuvées are bottled without any additives, only less than 10 mg/L of SO2 when necessary.
