Domaine Hervé Souhaut is located in the northern part of Ardèche, just on the border with Saint-Joseph, and is run by Hervé Souhaut and his partner Romane Besson. Originally trained as an agronomist, Hervé previously worked for legendary producers such as Pierre Overnoy in Jura – an experience that has clearly shaped his uncompromising approach to wine and craftsmanship.

The winery works exclusively with local grape varieties, primarily Syrah for red wine and Viognier for white wine, supplemented by old vines of Gamay and Chasselas on plots that are often steep and on pure granite. Many of the vines are 50–100 years old and are cultivated manually without the use of synthetic agents. The work in the field is the foundation: low yields, respect for biodiversity and a clear ambition to let each plot speak for itself.

In the cellar, work is done without additives and with minimal intervention. Fermentation occurs spontaneously with the grapes' own yeast cells, and the wines are often aged in used barrels or tanks so as not to overwhelm the raw material. Bottling is done without fining and with very little or no sulfur, depending on the vintage and wine.
