Vitacée

France · Burgundy · Macon

In Burgundy, we find Vitacée – a small, modern project led by winemaker David, who has been deeply rooted in the region’s classical winemaking tradition since the late 1990s. With experience from producers such as Bernard-Bonin, Jean-Philippe Fichet, and as cellar master at Domaine des Croix, he has developed a strong technical understanding of Burgundy’s terroir and grape varieties.

Vitacée was created as a personal project, focused on working with carefully selected fruit from organically farmed vineyards, often in collaboration with like-minded growers. For example, the fruit for his Mâcon wines comes from vineyards cultivated with horse plowing, reflecting a strong respect for soil structure and biodiversity.

In the cellar, David follows a clear low-intervention philosophy. Fermentation is spontaneous, and sulfur is used only in very small amounts. The goal is to produce wines that are precise, pure, and expressive, allowing both fruit and terroir to shine without technical manipulation.

Vitacée works primarily with classic Burgundian varieties such as Chardonnay and Pinot Noir, focusing on wines that emphasize energy, freshness, and clarity rather than weight and power. The result is a style that bridges modern natural wine expression with the timeless elegance of Burgundy.

Vitacée represents a new generation in Burgundy – winemakers with deep technical knowledge who choose a freer, more personal approach, where collaboration, organic farming, and minimal intervention are at the core.
