What is white wine?

White wine is wine made primarily from the juice of white or green grapes - and sometimes also from blue grapes where the skins are quickly removed. The color can range from almost clear to yellow-golden or slightly greenish, but the name “white wine” is used to distinguish it from red wine. White wines range from crisply dry to soft, sweeter styles and offer great versatility in food pairing.

The most common grape varieties (and what they taste like)

  • Chardonnay: The world's most widely grown white grape - can be light and crisp or full-bodied and barrel-aged with notes of apple, pear, butter and vanilla. Used in everything from Burgundy to New World wines.

  • Sauvignon Blanc: Fresh, aromatic, often with green/herbal notes and high acidity - perfect for seafood and light salads.

  • Riesling: Can be dry or sweet; high acidity and often minerality with floral and citrusy aromas - excellent with spicy food.

  • Gewürztraminer, Viognier, Pinot Grigio, etc. each with their own profile - from spicy and floral to neutral and light.

How do you choose white wine for food?

The key is balance: match the wine'sbodyandacidwith the dish. Light fish dishes and shellfish often go best with fresh, acidic wines like Sauvignon Blanc or a dry Riesling. Fatty fish or creamy sauces can handle a fuller, barrel-aged Chardonnay. For strong, spicy food, a slightly sweet Riesling can be a surprisingly good match. Many Danish wine retailers create categories with “wine for fish” or “wine for chicken” - use them as a quick guide.

Serving and storage - bring out the best in wine

Serving temperature is important: light, crisp wines are best chilled (around 6–8°C), while full-bodied, barrel-aged white wines should be served slightly warmer (10–12°C) to release the aromas. Avoid serving white wine ice cold — too low a temperature numbs the aromas. Store unopened bottles lying down in a cool, dark room and use a wine stopper or vacuum stopper for opened bottles; most white wines should be drunk within 1–3 days of opening, depending on the style.

Buying guide: what to look for?

  1. Style (dry/sweet/full-bodied):Decide whether you want something fresh and light or something full-bodied and complex.
  2. Age:Some white wines (e.g. top Burgundy wines or mature Riesling) can be stored, but most regular white wines are intended to be drunk young.
  3. Region and producer:Get to know a few good producers or regions - e.g. Chablis (fresh minerality), Mosel Riesling (elegant acidity), New Zealand Sauvignon (fresh and aromatic).
  4. Price-quality:Many surprisingly good white wines are found in the mid-price segment; choose the producer rather than just the price. Use customer reviews as a supplement.

5 quick tips for choosing the right bottle

  • For fish: choose high acidity and low acidity (Sauvignon Blanc, Albariño).
  • For chicken with cream sauce: try a barrel-aged Chardonnay.
  • For pizza/light meat: a dry Vermentino or Pinot Grigio.
  • For Asian spicy food: try a semi-dry Riesling.
  • If in doubt: choose a dry, aromatic wine - it goes well with most dishes.
