Sauvignon Blanc – Loire and Bordeaux's living classic with green energy in organic and natural wine

Sauvignon Blanc is one of the world’s most recognisable green grapes, with its historical origins in western France, where it has been cultivated since the Middle Ages in the Loire Valley and Bordeaux. Its name comes from the French word sauvage (wild), a reference to its original, natural growth habit. Over the centuries, it has become synonymous with crispness, green freshness and terroir expression – from Sancerre and Pouilly-Fumé in the Loire to Graves in Bordeaux, where it is often blended with Sémillon.

According to Winegrapes: Revised Edition (University of Adelaide, 2020), Sauvignon Blanc now covers around 123,000 hectares globally, of which around 80,000 hectares are found in the EU. France is by far the largest centre with over 30,000 hectares, followed by Italy, Spain, Austria and the Czech Republic, where the grape has found a foothold in cooler climates. In recent years, Sauvignon Blanc has also become an important grape in organic and biodynamic projects, particularly in the Loire, Friuli and Styria, where winemakers seek to express the grape’s natural energy with minimal intervention.

Sauvignon Blanc thrives best in calcareous and flinty soils, where its distinctive acidity and herbal character come into its own. In the context of natural wine, it is often vinified with spontaneous fermentation, long yeast contact and no added aroma-controlling yeast strains, which highlights its lively, precise profile. It can also be used for orange wine, where short skin contact provides extra structure and depth.

Aromatically, Sauvignon Blanc ranges from gooseberries, green pepper and grass in the cool climates to ripe notes of passion fruit, citrus and flint in warmer climates. Its combination of high acidity, clear sense of terroir and flexibility makes it a favourite among winemakers working with biodynamics, organics and natural wines. In other words, Sauvignon Blanc is both a classic and a pioneer – a grape that manages to unite precision, freshness and sustainability in one glass.
