This cuvée comes from the iconic single parcel of Sous-Roche, located below Château-Chalon, where Savagnin is grown on steep slopes under the cliff. The wine is a pure expression of the area’s historic main grape and is produced with minimal intervention and great respect for the terroir. François Rousset-Martin works intuitively and without modern oenological aids, and Cuvée de Professeur is considered one of his most terroir-focused wines from the site.

Francois Rousset-Martin

Domaine François Rousset-Martin is located in Jura, with plots around Arbois and Pupillin, and is run by François Rousset-Martin, who has established himself as one of the most uncompromising figures in the region. His approach is deeply rooted in Jura tradition, but without nostalgia – it is about working extremely precisely with place, grapes and time.

The winery works exclusively with local grape varieties such as Savagnin, Chardonnay, Ploussard, Trousseau and Poulsard, grown on small plots of limestone and marl soils. Many of the vines are old and are tended manually without the use of synthetic agents. Field work is consistently low-interventionist, with a focus on balance in the vine and a vibrant soil life, rather than high yields.

In the cellar, François Rousset-Martin works without additives and without sulfur. Fermentation occurs spontaneously, and the wines are aged for a long time – often several years – in large, old barrels, demi-muids or foudres, where oxidation and reduction are allowed to develop naturally. Flor plays a central role in several wines, but never as a dogma; each wine follows its own rhythm depending on the vintage, grape and plot. Bottling occurs without fining or filtering, and the release is often late, only when the wine is judged ready.

François Rousset-Martin's work is characterized by extreme patience and consistency: no adjustments, no shortcuts, no attempts to standardize the expression. The wines are the result of long processes, firm choices, and a fundamental trust in the voice of the Jura terroir.
