Sour ale, Mondeuse

Mondeuse is a sour ale/“grape ale” from Brasserie du Mont Salève in Haute-Savoie, where the beer is macerated with whole grapes of Mondeuse — the traditional grape variety from the Savoy region used in winemaking. This means that the beer is not only tart and lively like a sour, but also bears the structure and natural character of the grapes, as fermentation and grape material are mixed in a hybrid process between beer and wine elements. This approach emphasizes the brewery’s experimental style, where craftsmanship, spontaneous fermentations and the use of fruit from the wine world create complex, unconventional beer profiles.

Artisanal brasserie located in Neydens, Savoie. Michaël Novo, the brewer and founder, opened the brewery in 2010, after building chemical installations for a design office and experimenting with his own recipes in his spare time.

He produces a wide range of beers, from black, brown, amber, with the range of beers being strongly characterized by the specific hops used.

Brewed without any additives or preservatives. All the beers are unpasteurized and unfiltered. Brewed simply with malts, hops, yeast, and water

Brewed in an environmentally-friendly way. The dregs are donated to local farmers to feed livestock.
