The wine is vinified with a gentle touch: partially whole-cluster fermentation, a limited proportion of new oak, and subsequent ageing in French barrels — a method that preserves freshness and the mineral expression of the terroir. Malolactic fermentation finishes before bottling, rounding the wine out and adding a subtle softness.
