NV Brut Blanc de Blancs from Passerine is a sparkling wine from the Blanquette de Limoux region of Languedoc, one of France’s oldest sparkling wine regions. The name Passerine pays homage to the songbirds in the vineyards, and the wine is made in collaboration with Jacques Calvel of J. Laurens, a renowned producer in the area. The grapes come from high-altitude organically converted fields, and vinification follows the méthode traditionnelle with a focus on terroir and finesse. The bubbles have a minimum of 12 months on the lees and a well-balanced 7 g/L dosage, which gives freshness and length in the glass.
