Jonathan started his winery in 2017, which today consists of 5ha of vines, mainly Cabernet Franc, with some Chardonnay and Pineau d’Aunis. From Normandie and originally closer to cider region, Jonathan did a Phd in Chemistry and worked 10 years inside the lab. A life changing choice with a motivation of learning more and on the best way putted Jonathan back at school in Beaune and worked in Biodynamic wineries in Champagne, Burgundy and Rhône.
The vines he owns have been farmed organically for 20 years. Everything is harvested by hand and fermented with native yeast. The use of SO2 is extremely low if not prohibited.
