2020, Les Rosacees

This tender tart cider (26 gr residual) is made from old varieties of pears, apples and quinces. It has been stirred and disgorged without the addition of liqueur, after at least 15 months of aging in bottle.

Extreme care has been taken in the selection of varieties and fruits, as well as in the blending. We find very greedy notes of quince and passion fruit, supported by a tangy mouth and coated with a beautiful roundness thanks to the pear. A fine astringency at the end brings structure and calls for the matching of food and cider.
